What to do with Kale!

You’ve heard of it and seen it in the grocery. You know that it is good for you but for goodness sakes what in the heck do you do with it? Try this great recipe!  Courtesy of EATING WELL MAGAZINE.

INDIAN-SPICED KALE AND CHICKPEAS

1 TBL. extra virgin olive oil

3 cloves garlic, minced

1-1/2 pounds kale, ribs removed and coarsely chopped

1 cup reduced sodium chicken broth or vegetable broth

1 tsp ground coriander (check DIRTY GIRL FARM for this)

1/2 tsp ground cumin (check DIRTY GIRL FARM for this)

1/4 tsp garam masala (check DIRTY GIRL FARM for this) (this is an Indian spice)

1/4 tsp salt

1-15 oz. can chickpeas, rinsed

Heat oil in a Dutch oven over medium heat. Add garlic and cook, stirring, until fragrant about 30 seconds. Add kale and cook, tossing with two large spoons, until bright green, about 1 minute. Add broth, coriander, cumin garam masala and salt. Cover and cook, stirring occasionally, until the kale is tender 8-10 minutes. Stir in chickpeas; cover and cook until the chickpeas are heated trhough, 1-2 minutes.

Recipe tip:  A 1-1 1/2 lb of bunch of kale will yield 16 to 24 cups of chopped leaves. When preparing kale remove the tough ribs, chop or tear the kale as directed, then wash it—-allow some water to cling to the leaves. The moisture helps steam the kale during the first stages of cooking.

Ready to go vegetarian? Here is a great recipe to try….remember to use organic ingredients whenever possible. Organic foods are becoming more and more available in grocery stores across the country.

HEATHER’S MEATLESS LOAF

3 eggs beaten

1 TBL. dried parsley flakes (check out DIRTY GIRL FARM  for these)

1 tsp. dried Italian seasoning (check out DIRTY GIRL FARM  for these)

1/2 cup dry bread crumbs

1/4 tsp ground pepper (check out DIRTY GIRL FARM  for these)

1 tsp olive oil

1 cup diced onions

1/2 cup diced celery

12 oz. frozen ground beef substitute

1/2 cup ketchup

Preheat oven to 350 degrees. In large mixing bowl, combine eggs, parsley, Italian seasoning, bread crumbs, and pepper and mix well. Set aside. Spray a 9 x 5 loaf pan with nonstick cooking spray and set aside.

In medium saucepan, saute onions and celery in vegetable oil. Add to egg mixture along with the thawed beef substitute and 2 TBS of ketchup. Mix thoroughly and press into prepared loaf pan.

Bake at 350 degrees for 50-60 minutes. Spread remaining ketchup over loaf during last 15 minutes of baking time to glaze. Let stand 10 minutes before slicing.

Can’t have meatloaf without mashed potatoes…here is a vegan recipe for gravy to put over those mashed potoatoes..making this a total comfort food meal!!!

VEGAN BROWN GRAVY (from the SKINNY BITCH book)

1/4 cup refinned coconut oil

1/2 cup whole wheat pastry flour

2-21/4 cups low sodium vegetable stock (try Imagine brand)

4 TBL. BRAGG’S LIQUID AMINOS (or 8 tsp. tamari or soy sauce)

salt & pepper to taste

Heat the oil in a 2-3 quart saucepan over medium heat. When the oil is almost completely melted, whisk in the flour.

Cook, stirring often, until the mixture is browned and smells nutty, about 5 minutes. A little at a time, add 2 cups of the stock, whisking until smooth after each addition. Remove from the heat and whisk in the BRAGG’S LIQUID AMINOS (or tamari or soy sauce) Add more stock, if desired, until the gravy reaches the desired consistency. Serve hot. Cover what you don’t use and refrigerate for 3-4 days. Reheat gently adding a little more stock or water if needed.
